Stainless vs. Plastic Rolling Pins - which sticks more?

Hi, I am getting ready to purchase a reversible dough sheeter and one model has plastic (PE) rollers, while the other has Stainless. While I know the stainless is the higher end (last longer), I am nervous about my gluten-free (date based) dough sticking to the rollers. Currently, we roll everything by hand with plastic fondant rollers.

If anyone has any experience in this, I'd greatly appreciate your feedback -- Thanks!

Personally I would go with the stainless steal. You just need to make sure you use enough flour (rice flour or what ever kind you use in your GF baking) to prevent it from sticking.

Sheeters are just like rolling pins and I always prefer to use either wooden or granite or metal.

I also find metal rollers easier to clean then their plastic counterparts.
