Iron Sausage Meat
Low-cost Pork Dishes
As we sit in the double dip of the recession, with the increase of food in general - why should we be forced to splash out more on expensive meats.
Butchers concur that cheaper pork lightens the damage to one's bank balance, and preparation is key to making the perfect [cheap] pork dish.
Pork can be as cheap as you like, depending on which 'cut' and part of the body one prefers.
It can be sold minced, which is fitting for casseroles and kebabs, and put into edible casing and turns it into people's all time favourite, the sausage.
One could consider the 'rib cut', an affordable choice to say the least. With so many cooking methods, such as boiling, frying, grilling & barbequing - the perfect summer option. And finally the 'hock', this the lower half of a pig's succulent leg, requires a longer cooking duration, but is generally great for soups, stews and braised dishes where it adds a smoother texture, exciting richness and a new aromatic flavour.
So why not enjoy a cheap tasty dish that will cost you under ten sterling pounds, with key favourites such as pork chops roasted or grilled pork & the infamous BBQ ribs.
Here are some healthy eating facts for pork:
- Rather than frying, try grilling the meat.
- Buy the leanest cut, with reduced fat.
- By roasting the meat on a metal rack, excess fat will run off the meat.
- Leave off the oil and excess fat (or additional fat if you're thinking of leaving it in).
- Smaller portions of meat can be balanced out with larger portions of vegetables.
Apart from its economical benefit, pork has so much to offer. High in protein, vitamins and minerals - Pork provides healthy substances, such as iron, selenium and zinc.
But these core vitamins can be eliminated whilst cooking. Broiling and roasting provide better vitamin preservation than braising, and stewing destroys the majority of vitamins. Jaws dropped to the floor yet? Heating up meat for too long does have its disadvantages though, with both bacteria AND vitamins being eliminated in the process.
So don't follow the rumours that pork is unhealthy and high in fat - this is completely untrue. The facts are there to see, so have a look around and see for your own eyes.
Just right for a cold night: Sweet potato Shepherd’s Pie recipe (Denver Post)
Come autumn, my thoughts turn to Shepherd's Pie, that classic Celtic farmhouse
recipe that's the best way I know to use up leftover meat and potatoes, and
the dregs from those bags of frozen peas and carrots that have been haunting
your freezer since summertime. Here's a twist: Instead of beef, or beef and
lamb, [...]
