Kitchen Floor Designs that Work
As a handyman in Temecula, I find that the common u-shape plan is versatile and generally puts one's workstation on each of three walls. The pros of this are good storage and counter space on three sides that maximize effectiveness but this is not the best plans for entertaining or for fitting multiple chefs. Major traffic nightmares in the kitchen! One other thing to look at is you have to have the typical 10x10 foot space and anything less will not provide the minimum 4 feet work space that is well-advised for the centre of the room. In a giant kitchen for maximum efficiency, find one workstation in a freestanding island.
The L-shape plan permits 2 workstations on one wall and the 3rd on an opposite wall. This layout is way more efficient concerning space than the U-shape plan particularly if the main workstations are found near to the bend of the L. The L-shaped plan is not well matched for small kitchen spaces and you want to allow enough open counter space between the two workstations that share identical wall. This is at least 4 feet. Other things to think about is the placement of the workstations which are vital. The work needs to go from the refrigerator to the sink and then to the cooker cooktop and serving area. An ideal eating nook is the area opposite the bend of the L.
The island plan is a preferred blueprint because it includes a freestanding workstation customarily including the sink or stovetop. This is a wonderful blueprint for wide kitchens where the work triangle surpasses the twenty-eight foot rule that dictates that for optimum potency. Island plans aren't well suited in kitchens where two work stations must be on opposite walls. The island is a central location for specialty counters such as butcher block for slicing vegetables or marble for rolling out those delectable puddings.
Another concept is a rolling island which can roll outside to your terrace or deck when entertaining guest. When one end of the island is connected to a wall or line of cabinets , this is referred to as a peninsula plan. The peninsula kitchen packs all the flexibility of island but doesn't require as much room. Like islands, the peninsula plan makes the cook a workstation and a view into another room rather than just towards a wall. After meal preparation, a peninsula can also be used as a serving buffet or bar.
The one wall plan is typically seen in smaller houses, holiday houses and apartments. This floor plan is definitely the most room saving but is least efficient for the cook. Routinely there is a door at each end which translates into lots of thru traffic. This will create quite a few problems as well as frustration for the cook. One wall kitchens work better when the sink is in the middle beside the refrigerator and the stovetop. If you've got the space, permit four feet of counter space on each side of the sink.

Where is the best commercial-grade convection oven?
My brother and I are opening a small Italian restaurant and are in need of a high quality commercial-grade convection oven. We will be requiring a double deck oven with at least 10 removable racks. We've given this a lot of thought and think just one double-deck oven will be just enough for the amount of traffic we should receive.
A restaurant supply store would be the best bet. If you haven't decided on specific model yet, SouthBend makes a convection oven that would suit your needs perfectly, from what you've said.
